I have never had carrot soup before I will have to give it a shot.
Sounds delicious. A bit of grated carrot or ginger would make a nice garnish. Or a swirl of sour cream. Yum!
I'm a big fan of soups, too. This one sounds really good. I'll have to give it a try! thanks for sharing.
