Tasty Tuesday - Quinoa Risotto

I discover quinoa this year and to be honest I love it! In risottos it is simply wonderful and what I like to cook quite often is a quinoa risotto with shrimps and salmon and a bit of zucchini.

What I used?

200 gr quinoa
500 ml stock
1 zucchini
1 large onion
100 gr smoked salmon
100 gr shrimps
olive oil
salt, pepper, oregano
some parmezan cheese

The zucchini I prepared on the side with a bit of stock and some onion. As spices I used only salt, pepper and oregano.

The risotto takes a bit longer, around 20 minutes, just all ingredients and don't forget to stir!
