Winter is just around the corner and this is a suitable recipe for this season!

If you don't know it by now, now you should find out: I LOVE SOUPS, and for sure cream soups are among my favourites. During winter time I like to experiment with different vegetables and for the last weekend I chose carrots and ginger. This is what resulted:

What I used?

4 carrots

1 large potato

1 large onion

2 hot peppers

ginger (as much as you like)

2 garlic cloves

250ml coconut milk

250ml vegetable stock

a bit of olive oil

salt, pepper, oregano

What I did? At the beginning I let the chopped onion, garlic and ginger get a bit of hot oil, then I added the carrots, peppers, potato and after 3 minutes the milk and the stock After 20 minutes I used my mixer and created  a smooth, yummy and orange soup! I did not need anything else, the soup is enough!

In the winter I love to cook soups, they are so nicely warm, they heat you up from within. One new discovery of mine is the white bean cream soup, recipe found via Pinterest here. I adapted it a bit at the end with a hint of pumpkin oil and a bit of crispy ham in the oven.

Ingredients:
1 2/3 cups drained Navy Beans (canned or dried and soaked overnight)
1 1/4 cups water
1/2 tsp salt
3 Tbsp vegan butter
1/2 cup chopped onion
1/2 cup chopped parsley
1/3 cup celery, chopped
2 tsp vegan liquid smoke
1/4 tsp black pepper
2 Tbsp cayenne pepper hot sauce
4 garlic cloves or 1 Tbsp garlic powder
1 large bay leaf
1 medium white potato, baked (skin on)
