Plum cake

Peter brought some lovely plums today so I thought they would look lovely in a cake, so after a small search I found this plum cake.

Ingredients:

600 g plums
175 g curd cheese (I had mascarpone so I used it!)
6 tablespoons milk
6 tablespoons oil
150 g sugar
1 package vanilla sugar
1 pinch of salt
300 g flour
1 baking powder
1 egg yolk (the eggwhite I added as well - see below)
4 tablespoons almonds
some butter

Instructions:

Wash the plums and cut the fruit in four pieces. Mix the curd cheese / mascarpone, milk, oil, 50 g sugar, vanilla sugar and salt. Separately mix the flour with the baking powder. Slowly add the flour mix to the curd cheese mass. I also added the egg white.

The mix will be the bottom of the cake, which will be added in a round form (prior to this grease it well). On the bottom put the grounded almonds. Then on top the plums.

Separately mix the egg yolk with the remaining sugar and create a kind of crumble (I put some cinnamon in the mix, since I love the taste). This will be the final layer.

I baked it for 45 minutes at 200 °C. My product looks like this, still sizzling:

Oh, this is not fair, showing me these delicious looking baked plum cakes and not being able to follow through with a taste! It is tantamount to torture!

You know, that is an easy recipe so I think I could do it! I love any kind of fruit cake.

I love plums as well Claudia, and your plum cake looks (and smells too, I'm sure!) quite delicious. Wouldn't it be wonderful if I could reach into my laptop and cut me off a slice! Hee Hee! Hope you are enjoying the weekend my friend.

I will have to try that recipe out for sure! I know it would go quickly in this house of many eaters. Four sons, one daughter, husband, myself, four DIL's and three grandkids. It would be crumbs in a sec!
