Tasty Tuesday - Avocado Salad

Ingredients
2 avocados - peeled, pitted and diced
1 sweet onion, chopped
1 green bell pepper, chopped
1 large ripe tomato, chopped
1/4 cup chopped fresh cilantro
1/2 lime, juiced
salt and pepper to taste

Directions
In a medium bowl, combine avocados, onion, bell pepper, tomato, cilantro and lime juice. Gently toss until evenly coated. Season with salt and pepper.

Something light for the start in the new year!

I had this yesterday at a BBQ so delicious and fresh.


Just what we need my friend, after all the food of the last couple of weeks. I love avocado! I presume thAT Green Tea and Cupcakes lives somewhere nice and warm, as she had a BBQ yesterday! Driving rain and gale force winds here today :(


This is exactly what I need after the indulgence over Christmas!

Ummm....I love avocado anything. Sadly the two I purchased prior to getting ill were tossed as my sweet date of the last 40 plus years does many things well. But he does NOT cook. When I finally made my way to the kitchen they sat on the counter old, dark and wrinkly. LOL, sort of like how I felt!

Now off to the grocery to replenish supplies!

Avocados are a favorite of mine. I love them on sandwiches or salads.
