Tasty Tuesday - White Bean Soup

Posted by Claudia Moser on 4:00 PM in , ,
In the winter I love to cook soups, they are so nicely warm, they heat you up from within. One new discovery of mine is the white bean cream soup, recipe found via Pinterest here. I adapted it a bit at the end with a hint of pumpkin oil and a bit of crispy ham in the oven.

Ingredients:
1 2/3 cups drained Navy Beans (canned or dried and soaked overnight)
1 1/4 cups water
1/2 tsp salt
3 Tbsp vegan butter
1/2 cup chopped onion
1/2 cup chopped parsley
1/3 cup celery, chopped
2 tsp vegan liquid smoke
1/4 tsp black pepper
2 Tbsp cayenne pepper hot sauce
4 garlic cloves or 1 Tbsp garlic powder
1 large bay leaf
1 medium white potato, baked (skin on)

Let me know if you try it! ENJOY!

That looks wonderful. I've just bought a little soup recipe book so wish me luck. Creative cooking isn't really my thing :-)

Ooh, that sounds delish! Will let you know when I make it!

Secret to nail polish - when you're sat down at night relaxing, paint your nails then and always use a top coat. I always keep my nails short so they don't get bashed and my polish will last up to a week that way!

@Sarah - I am sure you can achieve everything, cooking is easy when you see it as a fun activity!
@Emma - thank you so much for the advice, I will try it!

Motto

"A story is not like a road to follow … it's more like a house. You go inside and stay there for a while, wandering back and forth and settling where you like and discovering how the room and corridors relate to each other, how the world outside is altered by being viewed from these windows. And you, the visitor, the reader, are altered as well by being in this enclosed space, whether it is ample and easy or full of crooked turns, or sparsely or opulently furnished. You can go back again and again, and the house, the story, always contains more than you saw the last time. It also has a sturdy sense of itself of being built out of its own necessity, not just to shelter or beguile you."
