In the winter I love to cook soups, they are so nicely warm, they heat you up from within. One new discovery of mine is the white bean cream soup, recipe found via Pinterest here. I adapted it a bit at the end with a hint of pumpkin oil and a bit of crispy ham in the oven.
Ingredients:
1 2/3 cups drained Navy Beans (canned or dried and soaked overnight)
1 1/4 cups water
1/2 tsp salt
3 Tbsp vegan butter
1/2 cup chopped onion
1/2 cup chopped parsley
1/3 cup celery, chopped
2 tsp vegan liquid smoke
1/4 tsp black pepper
2 Tbsp cayenne pepper hot sauce
4 garlic cloves or 1 Tbsp garlic powder
1 large bay leaf
1 medium white potato, baked (skin on)
